ELDERBERRY CORDIAL RECIPE

*2 cups of elderberry juice that has been sweetened with sugar or honey.

¼ to ½ cup blackberries OR ¼ cup blackberry juice

1 Cinnamon Stick

½ lemon with peel

1 tsp. dried marshmallow leaves

1 tsp. blend of red hibiscus, lemongrass, rosehips, orange peel, licorice root OR 1 Stash’s Wild Raspberry Hibiscus tea bag

½ cup water

1 - 2 cups of merlot or wine of choice (optional)

If you have your sweetened elderberry juice prepared, these are the steps:

In a medium saucepan, combine the whole blackberries or juice with cinnamon stick, lemon peel, dried marshmallow leaves and the lemongrass, rosehips, orange peel, licorice root blend OR Stash’s Wild Raspberry Hibiscus tea bag, combine with the water. Cover & simmer all ingredients for about 30 minutes. DO NOT BOIL.

Add the Elderberry juice. Allow to marry or sit in pot covered till room temperature. Strain. Stir in 1 - 2 cups of wine. Pour into prepared jars and keep in the refrigerator.

*To prepare Elderberry Juice:

2 cups elderberries

1 cup water

In large saucepan, add elderberries and water. Bring to a boil. Reduce heat; cover and simmer for 30 minutes to 45 minutes. I like to mash the berries as I go. Use a fine wire mesh strainer to strain all seeds out of the juice and/or all natural cheesecloth to squeeze all the good juice out. Add 1 cup of honey or white sugar. Allow to cool. Can put in freezer to use for later. This is elderberry syrup and can be used alone for the same benefits as cordial.

How to use:

To take the Elderberry Syrup. 1 – 2 tsp. daily for 12 weeks.

To take the Cordial: 2 – 4 ounces one time per day for six weeks.

You can take six weeks off and restart the elderberry regimen.

BENEFITS

World-renowned Israeli virologist Dr. Madeleine Mumcuoglu has dedicated her life to researching the health benefits of Elderberry extract and has established a clinically proven treatment against flu (including swine flu and avian flu).

Elderberry juice syrup seems to relieve flu symptoms and reduce the length of time the flu lasts when taken by mouth within 48 hours of the first symptoms. Taking elderberry lozenges within 24 hours of the first symptoms also seems to reduce flu symptoms. Relief seems to occur within 2 to 4 days of treatment for most people. Taking a product that contains elderberry juice and echinacea also seems to relieve symptoms and reduce the length of time flu lasts. It seems to work similar to the prescription drug oseltamivir (Tamiflu).

According to WebMD: Some people also take elderberry by mouth for hay fever (allergic rhinitis), cancer, as a laxative for constipation, to increase urine. It is also used for heart disease, high cholesterol, headache, toothache, and weight loss. It has anti-inflammatory properties.

  • High cholesterol. Early research shows that taking capsules containing dried elderberry three times daily for 2 weeks does not reduce cholesterol levels in people with high cholesterol.

  • Cancer.

  • Chronic fatigue syndrome (CFS).

  • Constipation.

  • H1N1 "swine" flu.

  • HIV/AIDS.

  • Hay fever.

  • Headache.

  • Nerve pain.

  • Toothache.

  • Weight loss.

  • Other conditions.

EXPERIENCE AND FOLK MEDICINE:

According to Susun Weed, Wise Woman Herbalist:

Elder berries are the fruit of the magical elder bush (Sambucus nigra). All parts of the elder have been used to help us get through the winter. It is said that a powerful woman lives in the elder; I call her Elda Mor, though she has many, many names. If asked to help, she will. But she resents demands and grows furious if she is used without thanks. As much as a teaspoonful of elder berry tincture can be used daily to improve mood and immunity. http://www.susunweed.com/herbal_ezine/January08/wisdomkeepers.htm

According to Anne Small, Wise Woman Herbalist:

ELDERBERRY: The leaves, flowers and berries of the elder are used in different ways. The leaves are used in external preparations - as part of a salve for instance. The flowers can be used fresh or dried in a syrup, tea or tincture. The berries are usually made into juice or a syrup when used, fresh or dried, since the raw seeds can cause vomiting and/or nausea. So, if you wanted a tea of the berries, you could mash the berries and add a little water and simmer them for 15 or 20 minutes. Then strain the liquid and add sweetening and more liquid to taste if needed. The bark of the root and the stem is considered a purgative. This information is for the Sambucus nigra which is pretty much all we have around here (Tennessee).
